Sea Bass Stocks are Critical

Sea Bass numbers are critical at the moment so the fishing quota for this year has been slashed in half and scientists are arguing that this should be reduced to a quarter.

We are actively encouraging everyone to buy Sea Bass only when absolutely necessary to give the species a chance to recover.

At Chez Laurent, Fine Yacht Provisions, we will still have wild Sea Bass but the prices are going up and up and by mid summer when demand is high they will be even higher then previous years. As a result we are also seeing a rise in King Sea Bream prices as people start to switching over to this fish.

Some alternatives to try wherever possible:

  • Farmed Sea Bass - These only come in small sizes and price are expected to rise.

  • King Sea Bream

  • Sea Bream - Grey or Striped.

  • Red Sea Bream

  • Lion Bass - Big white flakes and great for thick pavés etc.

  • Hake - A white fish too but the flesh is softer than Sea Bass.

  • Pollack - Closer to cod but a little firmer and side size similar to Sea Bass.

  • Whiting

  • Scorpion Fish - Great red skin colour, white flesh with a taste of lobster.

  • Kingfish Hiramasa (Farmed Australian) – Firm white fish with a nice fat conten, great for sushi, sashimi, tartares and excellent cooked.
